CHOCOLATE BILLIONAIRE CANDY
Line large cookie sheet with parchment paper, wax paper, or very lightly butter. Set aside.
2 (14-ounce) bag caramels, unwrapped 56 caramel squares
3 tablespoons water
1-1/2 cups pecan, chopped
1 cup rice cereal (rice krispiers or special K)
3 cups milk chocolate chips, substitute with dark, semi-sweet, or white chocolate chips
2 teaspoon coconut oil or vegetable shortening
1. In a 2-quart sauce pan, over low-heat, add caramels and water. Stir until caramels have melted. Turn off heat. Immediately add pecan and rice cereal. Stir until well blended.
2. Drop caramel mixture by teaspoonfuls onto the prepare cookie sheet. Place in refrigerator for 10 minutes or until caramel has harden.
3. Microwave chocolate and coconut oil in a large bowl for 1 minutes. Stir. Microwave an additional 15 seconds, at a time (stirring in-between time), until chocolate has melted.
4. Dip chilled caramels (one at a time) into chocolate coating well. Use a fork to remove from chocolate. Tap excess chocolate off caramels before placing back onto cooled cookie sheet. Refrigerate 10-20 minutes or until chocolate is firm.
TIPS: Store CHOCOLATE BILLIONAIRE CANDY in an airtight container up to 3 days. Store in refrigerator up to 2 weeks. Bring to room temperature before serving.
